Homemade ice-cream, kiddie style

We have had this Sassafras battery operated ice-cream machine for 3 years. Belle brought it out last night and lucky for her we had the basics: 1 cup milk, 16 ounces condensed milk and 5 tablespoons cocoa.

We mixed it all in a bowl, poured it in the ice-cream maker, pushed the mix button and let it stir for 30 seconds. Then we pushed the freeze button and threw it in the freezer over night. The battery keeps churning the blades while the ice-cream freezes. A little strange but it worked!

Ice-cream for breakfast anyone?

Berry crisp cones

Forget ice-cream in a cone, how bout shoving blueberry crisp in that puppy? I snagged this triple berry crisp recipe from www.allrecipes.com and made some adjustments since I didn't have three kinds berries or enough to make the full recipe AND I wanted it gluten free.  I baked as directed  and then at the insistence of my soon to be kindergartner, threw some of the tasty crisp in a ice-cream cone; your kiddies will love it more! Here's my gluten free recipe:
  • 3/4 cups Marion berries
  • 1 1/2 cups fresh blueberries
  • 2 tablespoons white sugar
  • 1/3 cup flax seed
  • 1/3 cup semolina flour
  • 1/3 cup soy flour
  • 1 cup rolled oats
  • 3/4 cups packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 3/4 stick cold butter
Here's what it looked like after I took it from the oven.  As you can see, I just used a pie pan.  This cone was not g-free but you can buy them.

Ice cream cone cupcakes

Betty Crocker Ice Cream Cone Cakes
They love ice cream.  They love cake batter.  Slap them together and they will fall over with joy.  I'm making these tasty treats for Belle's upcoming 5th birthday.  Here's what you do:  Mix your cake batter according to your recipe, place cupcake liners into  muffin tins, pour in the batter, place ice-cream cones on top and bake 15-22 minutes.  Cool, remove liner, frost and sprinkle with love. Here are some organic cake recipes. Send me your pics and comments when you make this one!
